Ingredients

  • 8 slices BUTTERBALL® Original Turkey Bacon
  • 4 cups fresh baby spinach
  • 2 cups freshly shredded Cheddar cheese
  • 2 cups riced cauliflower
  • 6 large eggs, beaten
  • ¼ cup unsalted butter, melted
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

Directions

  1. Cook bacon in large skillet over medium heat, turning occasionally, about 18 minutes or until crisp. Remove bacon; drain on paper towels. Let cool; crumble bacon.
  2. Combine crumbled bacon, spinach, cheese, cauliflower, eggs, butter, onion powder, garlic powder, salt and pepper in large bowl.
  3. Preheat waffle iron according to manufacturer’s directions; spray with nonstick cooking spray. Scoop ¾ cup waffle mixture onto waffle iron; cook 4 to 5 minutes or until golden brown. Repeat procedure with remaining waffle mixture.
